Cut 1 & ½ pounds of skinless boneless chicken into 1 inch pieces, fry in 1/4 cup olive oil or butter until browned, season with salt pepper & onion powder to taste.
Add 2 cans broccoli & cheddar cheese soup & 1 & ½ cups of milk or half water, half milk.
let simmer for a few minutes & add 1 10 oz bag frozen broccoli, cover & simmer until broccoli is tender.
Add 2 cups of minute type rice, turn off heat & let sit for at least 5 minutes or until rice is tender. Serve.
