Sweet & Sour Pork the pork:
1/2 cup flour 2 cups peanut oil
1/3 cup corn starch 2 tsp. baking powder
1/2-2/3 cup cold water 1 lb. Boneless pork cut in 1 inch cubes
1 T soy sauce lg green pepper thinly sliced & 1 red pepper
1 cup carrots thinly sliced thinly sliced.
in a mixing bowl combine flour & cornstartch. Stir in gradually 1/2 cup of water & soy sauce. continue beating until batter is smooth. Add 1 Tbspn. of water at a time until batter is just thick enough to coat pork pieces.
Pour oil into a 1 & 1/2 quart sace pan. Filling no more than 1/3 full. Heat over medium heat to 375 degrees. Stir 1 Tbspn of oil into the batter. Add baking powder to batter & mix well. Dip pork pieces into batter to coat & place in hot oil fry 5-7 minutes remove with slotted spoon & drain well. After pork is cooked leave oil in pan & add peppers & carrot- cook 1 minute or until tender- remove & drain well.
Sweet & Sour Pork Sauce:
1 Can unsweetened pineapple chunks 1/2 cup Wine vinegar
2 Tbspns Cornstartch 1/2 cup Dark corn syrup
2 Tbspns sugar 1/4 cup dry sherry
1/2 t salt.
Drain pineapple & reserve 1/2 cup of the juice. in large heavy skillet combine vinegar & cornstartch until it forms a smooth paste. Add corn syrup- sugar- sherry – salt & reserved pineapple juice. Bring to boiling stirring constantly over medium heat. Add pork & vegetables & the pineapple chunks. Bring to a second boil whil stirring constantly. Serve hot over rice.
